Lentil Salad with Lime Dressing

Ingredients

  • For the Lentil Salad:
  • 1 cup dried lentils (green or brown)
  • 3 cups water
  • 0.5 tsp salt
  • 0.5 cup cherry tomatoes, halved 🍅
  • 0.5 cup cucumber, diced 🥒
  • 0.25 cup red bell pepper, diced 🌶️
  • 0.25 cup red onion, finely chopped 🧅
  • 2 tbsp fresh cilantro, chopped 🌿
  • 0.25 cup feta cheese (optional) 🧀
  • For the Lime Dressing:
  • 3 tbsp olive oil
  • Juice of 2 limes 🍋
  • 1 tsp honey (or maple syrup for vegan)
  • 0.5 tsp Dijon mustard
  • 1 garlic clove, minced 🧄
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. 11️⃣ Cook the Lentils
  2. 2Rinse lentils under cold water.
  3. 3In a pot, bring water and salt to a boil, then add lentils.
  4. 4Reduce heat and simmer for 15-20 minutes, until tender but not mushy.
  5. 5Drain and let cool.
  6. 62️⃣ Make the Lime Dressing
  7. 7In a bowl, whisk together olive oil, lime juice, honey, Dijon mustard, minced garlic, salt, and black pepper.
  8. 83️⃣ Assemble the Salad
  9. 9In a large bowl, combine lentils, cherry tomatoes, cucumber, red bell pepper, red onion, and cilantro.
  10. 10Pour the lime dressing over the salad and toss to coat.

  12. 12Top with feta cheese (if using) and serve chilled or at room temperature!
