Cuban Black Bean Salad

Ingredients
- For the Salad:
- 1 can (15 oz) black beans, drained and rinsed 🖤
- 0.5 cup red bell pepper, diced 🌶️
- 0.5 cup green bell pepper, diced
- 0.25 cup red onion, finely chopped 🧅
- 0.5 cup cherry tomatoes, halved 🍅
- 0.25 cup fresh cilantro, chopped 🌿
- 0.5 cup corn kernels (fresh or canned) 🌽
- 1 avocado, diced 🥑 (optional)
- For the Lime Dressing:
- 3 tbsp olive oil
- Juice of 2 limes 🍋
- 1 tsp honey (or maple syrup for vegan)
- 0.5 tsp Dijon mustard
- 1 garlic clove, minced 🧄
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.5 tsp cumin
Instructions

- 2In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, garlic, salt, black pepper, and cumin.

- 4In a large bowl, combine black beans, bell peppers, red onion, cherry tomatoes, corn, and cilantro.
- 5Pour the lime dressing over the salad and toss to coat.
