Cuban Black Bean Salad

Ingredients

  • For the Salad:
  • 1 can (15 oz) black beans, drained and rinsed 🖤
  • 0.5 cup red bell pepper, diced 🌶️
  • 0.5 cup green bell pepper, diced
  • 0.25 cup red onion, finely chopped 🧅
  • 0.5 cup cherry tomatoes, halved 🍅
  • 0.25 cup fresh cilantro, chopped 🌿
  • 0.5 cup corn kernels (fresh or canned) 🌽
  • 1 avocado, diced 🥑 (optional)
  • For the Lime Dressing:
  • 3 tbsp olive oil
  • Juice of 2 limes 🍋
  • 1 tsp honey (or maple syrup for vegan)
  • 0.5 tsp Dijon mustard
  • 1 garlic clove, minced 🧄
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp cumin

Instructions

  2. 2In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, garlic, salt, black pepper, and cumin.

  4. 4In a large bowl, combine black beans, bell peppers, red onion, cherry tomatoes, corn, and cilantro.
  5. 5Pour the lime dressing over the salad and toss to coat.
  6. 63️⃣ Serve & Enjoy!
  7. 7Garnish with diced avocado (if using) and serve immediately or refrigerate for 15 minutes to enhance flavors.
