Tostones with Avocado and Fried Egg

Ingredients

  • For the Tostones:
  • 2 green plantains 🍌
  • 2 tbsp vegetable oil (for frying)
  • 0.5 tsp salt
  • For the Avocado Mash:
  • 1 ripe avocado 🥑
  • 0.5 tsp lime juice 🍋
  • Salt & pepper to taste
  • For the Fried Egg:
  • 2 eggs 🍳
  • 1 tbsp butter or oil
  • Pinch of salt & pepper
  • For Toppings:
  • 0.5 tsp red pepper flakes (optional) 🌶️
  • Chopped cilantro (optional)

Instructions

  1. 11️⃣ Prepare the Tostones
  2. 2Peel and cut the plantains into 1-inch slices.
  3. 3Heat oil in a pan and fry the plantains for 2-3 minutes per side, until golden.
  4. 4Remove, flatten with a tostonera or the bottom of a cup, and fry again until crispy.
  5. 5Sprinkle with salt and set aside.
  6. 62️⃣ Make the Avocado Mash
  7. 7Mash the avocado with lime juice, salt, and pepper.
  8. 83️⃣ Fry the Eggs
  9. 9In a pan, melt butter or oil and cook the eggs until whites are set and yolks are runny.
  10. 104️⃣ Assemble & Serve
  11. 11Spread the avocado mash over the tostones.
  12. 12Top with a fried egg, red pepper flakes, and chopped cilantro.
  13. 13Serve warm and enjoy this crispy, creamy, and savory delight!
