Carne Mechada with Garlic Yucca

Ingredients
- For the Carne Mechada (Shredded Beef):
- 5 lbs flank steak or chuck roast 🥩
- 1 tbsp olive oil
- 1 onion, chopped 🧅
- 1 bell pepper, diced (red or green) 🌶️
- 3 cloves garlic, minced 🧄
- 1 cup beef broth
- 0.5 cup tomato sauce 🍅
- 1 tsp cumin
- 1 tsp oregano
- 0.5 tsp smoked paprika
- Salt & black pepper to taste
- 1 bay leaf
- For the Garlic Yucca:
- 2 lbs yucca, peeled and chopped 🥔
- 3 tbsp butter 🧈
- 3 cloves garlic, minced 🧄
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 tbsp chopped parsley (optional)
Instructions
- 11️⃣ Cook the Beef
- 2In a large pot, heat olive oil over medium heat.
- 3Add onions, bell pepper, and garlic, cooking until softened.
- 4Sear the flank steak on both sides until browned.
- 5Pour in beef broth and tomato sauce, then add cumin, oregano, paprika, salt, pepper, and bay leaf.
- 6Cover and simmer for 1.5 to 2 hours, until beef is tender and easily shredded.
- 72️⃣ Prepare the Garlic Yucca
- 8Boil the yucca in salted water for 20-25 minutes until fork-tender.
- 9Drain and remove the tough core from the center of the yucca.
- 10In a pan, heat butter and olive oil, then sauté garlic until fragrant.
- 11Toss the yucca with the garlic butter mixture, seasoning with salt and pepper.
- 123️⃣ Shred the Beef & Serve
- 13Remove the beef from the pot and shred using two forks.
- 14Return the shredded beef to the sauce and mix well.
- 15Serve the Carne Mechada over the Garlic Yucca, garnishing with fresh parsley.
