Pollo Guisado with Roasted Vegetables

Ingredients
- For the Pollo Guisado (Stewed Chicken):
- 4 bone-in, skin-on chicken thighs 🍗
- 1 tbsp olive oil
- 0.5 cup sofrito (blend of onions, peppers, garlic, and cilantro)
- 3 cloves garlic, minced 🧄
- 1 onion, chopped 🧅
- 1 bell pepper, chopped 🌶️
- 0.5 cup tomato sauce 🍅
- 0.5 cup chicken broth
- 1 tsp adobo seasoning
- 1 tsp sazon seasoning
- 0.5 tsp cumin
- 0.5 tsp oregano
- 2 bay leaves
- 0.5 cup diced potatoes 🥔
- 0.5 cup chopped carrots 🥕
- 0.5 cup green olives 🫒
- Salt & black pepper to taste
- For the Roasted Vegetables:
- 1 zucchini, sliced 🥒
- 1 bell pepper, sliced 🌶️
- 1 sweet potato, diced 🍠
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.5 tsp garlic powder
- 0.5 tsp smoked paprika
Instructions
- 11️⃣ Brown the Chicken
- 2Season chicken thighs with adobo, sazon, salt, and pepper.
- 3Heat olive oil in a pot over medium-high heat.
- 4Sear the chicken on both sides until golden brown, then remove and set aside.
- 52️⃣ Build the Stew
- 6In the same pot, add sofrito, onion, garlic, and bell pepper. Sauté until fragrant.
- 7Stir in tomato sauce, broth, bay leaves, cumin, and oregano.
- 8Return the chicken to the pot and add potatoes, carrots, and olives.
- 9Cover and let simmer for 45 minutes, stirring occasionally.

- 11Preheat the oven to 400°F (200°C).
- 12Toss zucchini, bell peppers, and sweet potatoes with olive oil, salt, garlic powder, and smoked paprika.
- 13Spread on a baking sheet and roast for 20-25 minutes until golden and tender.
