Garlic Butter Shrimp with Plantains

Ingredients

  • For the Garlic Butter Shrimp:
  • 1 lb shrimp, peeled & deveined 🍤
  • 3 tbsp butter 🧈
  • 3 cloves garlic, minced 🧄
  • 1 tbsp olive oil
  • 0.5 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.25 tsp red pepper flakes (optional for heat)
  • 0.25 cup chicken broth or white wine 🍷
  • 1 tbsp lemon juice 🍋
  • Salt & black pepper to taste
  • Fresh parsley or cilantro for garnish 🌿
  • For the Fried Plantains:
  • 2 ripe plantains, sliced into rounds 🍌
  • 0.5 cup vegetable oil (for frying)
  • 0.5 tsp salt

Instructions

  1. 11️⃣ Fry the Plantains
  2. 2Heat vegetable oil in a pan over medium heat.
  3. 3Add the plantain slices and fry until golden brown, about 2-3 minutes per side.
  4. 4Remove and place on a paper towel. Sprinkle with salt.
  5. 52️⃣ Cook the Garlic Butter Shrimp
  6. 6In a pan, melt butter and olive oil over medium heat.
  7. 7Add garlic and sauté until fragrant (about 30 seconds).
  8. 8Stir in smoked paprika, cumin, red pepper flakes, salt, and black pepper.
  9. 9Add the shrimp and cook for 2 minutes per side until pink.
  10. 10Pour in chicken broth or white wine, followed by lemon juice.
  11. 11Simmer for 2 minutes until the sauce slightly thickens.

  13. 13Plate the garlic butter shrimp alongside the fried plantains.
  14. 14Garnish with fresh parsley or cilantro and serve with extra lemon wedges.
