Pollo Guisado with Rice

Ingredients

  • For the Pollo Guisado (Braised Chicken):
  • 4 bone-in, skinless chicken thighs 🍗
  • 2 tbsp olive oil
  • 0.5 cup sofrito
  • 3 cloves garlic, minced 🧄
  • 0.5 onion, chopped 🧅
  • 0.5 bell pepper, chopped 🌶️
  • 0.5 cup tomato sauce 🍅
  • 3 cups chicken broth
  • 2 potatoes, diced 🥔
  • 1 carrot, chopped 🥕
  • 0.5 cup green olives 🫒 (optional)
  • 1 tsp adobo seasoning
  • 1 tsp sazon seasoning
  • 0.5 tsp cumin
  • 0.5 tsp black pepper
  • 1 bay leaf
  • Fresh cilantro for garnish 🌿
  • For the White Rice:
  • 2 cups long-grain rice 🍚
  • 3 cups water
  • 1 tbsp olive oil
  • 0.5 tsp salt

Instructions

  1. 11️⃣ Sear the Chicken
  2. 2Heat olive oil in a large pot over medium-high heat.
  3. 3Season the chicken thighs with adobo, sazon, cumin, and black pepper.
  4. 4Sear the chicken for 5 minutes per side until golden brown.
  5. 52️⃣ Build the Stew Base
  6. 6Add sofrito, onion, bell pepper, and garlic; sauté for 3 minutes.
  7. 7Stir in tomato sauce, olives, and bay leaf.
  8. 8Pour in chicken broth and bring to a boil.
  9. 93️⃣ Simmer to Perfection
  10. 10Add potatoes and carrots, then reduce heat to low.
  11. 11Cover and simmer for 35 minutes, stirring occasionally.

  13. 13In a separate pot, bring water, olive oil, and salt to a boil.
  14. 14Add rice, reduce heat to low, cover, and cook for 18 minutes.
  15. 15Fluff the rice with a fork before serving.
