Churrasco Steak with Chimichurri Rice

Ingredients
- For the Churrasco Steak:
- 2 lbs skirt steak 🥩
- 2 tbsp olive oil
- 3 cloves garlic, minced 🧄
- 1 tbsp lime juice 🍋
- 1 tsp adobo seasoning
- 0.5 tsp black pepper
- 0.5 tsp cumin
- 0.5 tsp smoked paprika
- 0.5 tsp red pepper flakes (optional for heat)
- For the Chimichurri Sauce:
- 0.5 cup fresh parsley, chopped 🌿
- 0.25 cup fresh cilantro, chopped 🌿
- 3 cloves garlic, minced 🧄
- 0.5 tsp oregano
- 0.25 tsp red pepper flakes
- 0.5 tsp salt
- 0.5 tsp black pepper
- 2 tbsp red wine vinegar
- 0.5 cup olive oil
- For the Chimichurri Rice:
- 2 cups long-grain white rice 🍚
- 3 cups water or chicken broth
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.25 cup chimichurri sauce
Instructions
- 11️⃣ Marinate the Churrasco
- 2In a bowl, mix olive oil, minced garlic, lime juice, adobo, black pepper, cumin, smoked paprika, and red pepper flakes.
- 3Rub the steak with the marinade and let it rest for at least 30 minutes (or overnight for deeper flavor).

- 5In a blender or small bowl, mix parsley, cilantro, garlic, oregano, red pepper flakes, salt, black pepper, red wine vinegar, and olive oil.
- 6Blend until smooth or leave slightly chunky for texture.

- 8In a pot, bring water (or chicken broth), olive oil, and salt to a boil.
- 9Stir in rice, reduce heat, cover, and cook for 18 minutes.
- 10Once cooked, fluff with a fork and mix in ¼ cup of chimichurri sauce.

- 12Heat a grill or cast-iron skillet over high heat.
- 13Sear the steak for 3-4 minutes per side for medium-rare (adjust for preferred doneness).
