Pollo en Fricase with Cilantro Rice

Ingredients

  • For the Pollo en Fricase:
  • 4 bone-in, skin-on chicken thighs 🍗
  • 2 tbsp olive oil
  • 0.5 onion, chopped 🧅
  • 0.5 bell pepper, chopped 🌶️
  • 3 cloves garlic, minced 🧄
  • 1 tbsp sofrito
  • 1 cup tomato sauce 🍅
  • 0.5 cup chicken broth
  • 1 tbsp tomato paste
  • 1 tsp adobo seasoning
  • 1 tsp sazon seasoning
  • 0.5 tsp dried oregano
  • 0.5 tsp black pepper
  • 0.5 tsp cumin
  • 1 bay leaf
  • 0.5 cup green olives, sliced 🫒 (optional)
  • 1 potato, diced 🥔
  • 1 carrot, sliced 🥕
  • For the Cilantro Rice:
  • 2 cups long-grain white rice 🍚
  • 3 cups chicken broth
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 cup fresh cilantro, chopped 🌿
  • 0.5 lime, juiced 🍋

Instructions

  1. 11️⃣ Brown the Chicken
  2. 2Heat olive oil in a large pot over medium-high heat.
  3. 3Season chicken thighs with adobo, sazon, black pepper, oregano, and cumin.
  4. 4Sear chicken on both sides for 4-5 minutes per side until golden. Remove and set aside.
  5. 52️⃣ Build the Fricase Sauce
  6. 6In the same pot, sauté onions, bell peppers, and garlic for 3 minutes.
  7. 7Stir in sofrito, tomato sauce, tomato paste, and chicken broth.
  8. 8Add potatoes, carrots, olives, and bay leaf, then return the chicken to the pot.
  9. 93️⃣ Simmer Until Tender
  10. 10Cover and simmer on low heat for 45 minutes, stirring occasionally.
  11. 11Remove bay leaf and adjust seasoning if needed.
  12. 124️⃣ Cook the Cilantro Rice
  13. 13In a pot, bring chicken broth, olive oil, and salt to a boil.
  14. 14Add rice, reduce heat, cover, and cook for 18 minutes.
  15. 15Once cooked, stir in chopped cilantro and lime juice.

  17. 17Plate the Pollo en Fricase over Cilantro Rice, garnishing with extra cilantro.
