Pollo en Fricase with Cilantro Rice

Ingredients
- For the Pollo en Fricase:
- 4 bone-in, skin-on chicken thighs 🍗
- 2 tbsp olive oil
- 0.5 onion, chopped 🧅
- 0.5 bell pepper, chopped 🌶️
- 3 cloves garlic, minced 🧄
- 1 tbsp sofrito
- 1 cup tomato sauce 🍅
- 0.5 cup chicken broth
- 1 tbsp tomato paste
- 1 tsp adobo seasoning
- 1 tsp sazon seasoning
- 0.5 tsp dried oregano
- 0.5 tsp black pepper
- 0.5 tsp cumin
- 1 bay leaf
- 0.5 cup green olives, sliced 🫒 (optional)
- 1 potato, diced 🥔
- 1 carrot, sliced 🥕
- For the Cilantro Rice:
- 2 cups long-grain white rice 🍚
- 3 cups chicken broth
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.5 cup fresh cilantro, chopped 🌿
- 0.5 lime, juiced 🍋
Instructions
- 11️⃣ Brown the Chicken
- 2Heat olive oil in a large pot over medium-high heat.
- 3Season chicken thighs with adobo, sazon, black pepper, oregano, and cumin.
- 4Sear chicken on both sides for 4-5 minutes per side until golden. Remove and set aside.
- 52️⃣ Build the Fricase Sauce
- 6In the same pot, sauté onions, bell peppers, and garlic for 3 minutes.
- 7Stir in sofrito, tomato sauce, tomato paste, and chicken broth.
- 8Add potatoes, carrots, olives, and bay leaf, then return the chicken to the pot.

- 10Cover and simmer on low heat for 45 minutes, stirring occasionally.
- 11Remove bay leaf and adjust seasoning if needed.
- 124️⃣ Cook the Cilantro Rice
- 13In a pot, bring chicken broth, olive oil, and salt to a boil.
- 14Add rice, reduce heat, cover, and cook for 18 minutes.
- 15Once cooked, stir in chopped cilantro and lime juice.

- 17Plate the Pollo en Fricase over Cilantro Rice, garnishing with extra cilantro.
