Arroz con Camarones (Puerto Rican Shrimp Rice)

Ingredients

  • 1 lb shrimp, peeled & deveined 🍤
  • 2 cups long-grain rice 🍚
  • 3 ½ cups chicken broth (or seafood stock)
  • 1 tbsp olive oil
  • 0.5 onion, diced 🧅
  • 0.5 bell pepper, diced 🌶️
  • 3 cloves garlic, minced 🧄
  • 1 tbsp sofrito
  • 1 tsp adobo seasoning
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 0.5 cup tomato sauce 🍅
  • 0.5 cup frozen peas
  • 0.5 cup green olives, sliced 🫒
  • 1 tbsp butter 🧈
  • 0.25 cup fresh cilantro, chopped 🌿
  • 1 tbsp lime juice 🍋

Instructions

  1. 11️⃣ Sauté the Aromatics
  2. 2Heat olive oil in a large pot over medium heat.
  3. 3Sauté onions, bell peppers, and garlic for 3 minutes.
  4. 4Stir in sofrito, adobo, paprika, cumin, and black pepper.
  5. 52️⃣ Cook the Rice
  6. 6Add rice, stirring to coat it in the seasonings.
  7. 7Pour in chicken broth and tomato sauce, and bring to a boil.
  8. 8Reduce heat, cover, and let simmer for 20 minutes.
  9. 93️⃣ Cook the Shrimp
  10. 10In a separate pan, melt butter over medium heat.
  11. 11Add shrimp, salt, and lime juice, cooking for 3 minutes until pink.

  13. 13Stir peas, olives, and cooked shrimp into the rice.
  14. 14Cover and let rest for 5 minutes.
  15. 15Garnish with fresh cilantro and serve hot!
