Shrimp and Avocado Tostadas

Ingredients
- For the Shrimp:
- 1 lb shrimp, peeled & deveined 🍤
- 1 tbsp olive oil
- 2 cloves garlic, minced 🧄
- 1 tsp paprika
- 0.5 tsp cumin
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp red pepper flakes (optional) 🌶️
- 1 tbsp lime juice 🍋
- 0.25 cup chopped cilantro 🌿
- For the Avocado Mash:
- 2 ripe avocados 🥑
- 1 tbsp lime juice 🍋
- 0.5 tsp salt
- 0.5 tsp garlic powder
- 0.5 tsp cumin
- For the Tostadas:
- 8 corn tostadas 🌮
- 0.5 cup diced tomatoes 🍅
- 0.5 cup shredded lettuce 🥬
- 0.25 cup crumbled queso fresco 🧀
- 0.25 cup red onion, diced
- 1 jalapeño, sliced (optional) 🌶️
- Extra cilantro & lime wedges for garnish
Instructions
- 11️⃣ Cook the Shrimp
- 2Heat olive oil in a pan over medium heat.
- 3Add garlic, paprika, cumin, salt, black pepper, and red pepper flakes.
- 4Toss in shrimp, cooking for 2-3 minutes per side until pink.
- 5Stir in lime juice and cilantro, then remove from heat.
- 62️⃣ Make the Avocado Mash
- 7In a bowl, mash avocados with lime juice, salt, garlic powder, and cumin until smooth.
- 83️⃣ Assemble the Tostadas
- 9Spread avocado mash over each tostada.
- 10Add a layer of shredded lettuce, tomatoes, and shrimp.
- 11Sprinkle with queso fresco, red onion, and jalapeños.
- 12Garnish with cilantro and lime wedges before serving!
