Cuban Black Bean and Corn Salad

Ingredients

  • For the Salad:
  • 1 can black beans, drained & rinsed 🖤
  • 1 cup sweet corn (fresh, canned, or frozen) 🌽
  • 0.5 red bell pepper, diced ❤️
  • 0.5 green bell pepper, diced 💚
  • 0.5 red onion, finely chopped 🧅
  • 0.5 cup cherry tomatoes, halved 🍅
  • 0.25 cup fresh cilantro, chopped 🌿
  • 1 avocado, diced 🥑 (optional)
  • For the Dressing:
  • 3 tbsp olive oil
  • 2 tbsp lime juice 🍋
  • 1 clove garlic, minced 🧄
  • 0.5 tsp cumin
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Instructions

  2. 2In a small bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, and black pepper.
  3. 32️⃣ Assemble the Salad
  4. 4In a large bowl, combine black beans, corn, bell peppers, red onion, cherry tomatoes, and cilantro.
  5. 5Pour the lime dressing over the salad and toss gently to combine.
  6. 63️⃣ Serve & Enjoy!
  7. 7Fold in diced avocado just before serving.
  8. 8Let sit for 5 minutes for flavors to meld, then serve chilled or at room temperature!
