Bacalaitos with Pickled Onion Salsa

Ingredients

  • For the Bacalaitos (Cod Fritters):
  • 1 cup salted cod (bacalao), rinsed and shredded 🐟
  • 1 cup all-purpose flour 🌾
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder 🧄
  • 1 tsp fresh cilantro, chopped 🌿
  • 1 cup water
  • Oil for frying
  • For the Pickled Onion Salsa:
  • 0.5 red onion, thinly sliced 🧅
  • 0.25 cup white vinegar
  • 1 tbsp lime juice 🍋
  • 0.5 tsp sugar
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh cilantro, chopped 🌿

Instructions

  1. 11️⃣ Make the Pickled Onion Salsa
  2. 2In a bowl, mix red onion, vinegar, lime juice, sugar, salt, black pepper, and cilantro.
  3. 3Let it sit for at least 15 minutes to absorb the flavors.
  4. 42️⃣ Prepare the Bacalaitos Batter
  5. 5In a bowl, whisk together flour, baking powder, salt, black pepper, paprika, and garlic powder.
  6. 6Slowly add water, stirring until you get a smooth, slightly runny batter.
  7. 7Fold in shredded cod and cilantro.
  8. 83️⃣ Fry to Perfection
  9. 9Heat oil in a deep pan over medium-high heat.
  10. 10Drop spoonfuls of batter into the hot oil, frying 2-3 minutes per side until golden brown.
  11. 11Remove and drain on a paper towel.
