Tostones Rellenos de Camarones

Ingredients
- For the Tostones Cups:
- 3 green plantains, peeled and sliced into 1-inch rounds 🍌
- 1 tsp salt
- Oil for frying
- For the Shrimp Filling:
- 1 lb shrimp, peeled and deveined 🍤
- 2 cloves garlic, minced 🧄
- 1 tbsp butter 🧈
- 1 tbsp olive oil
- 0.5 tsp paprika
- 0.5 tsp cumin
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.25 cup chicken broth
- 1 tbsp lime juice 🍋
- 1 tbsp fresh cilantro, chopped 🌿
Instructions
- 11️⃣ Make the Tostones Cups
- 2Heat oil in a deep pan over medium heat.
- 3Fry plantain slices for 3 minutes, then remove and flatten into cup shapes using a tostonera or muffin tin.
- 4Fry again for 2 more minutes until golden and crispy.
- 5Sprinkle with salt and set aside.
- 62️⃣ Prepare the Shrimp Filling
- 7In a pan, heat butter and olive oil over medium heat.
- 8Sauté garlic for 30 seconds, then add shrimp, paprika, cumin, salt, and black pepper.
- 9Cook for 2-3 minutes until shrimp turn pink.
- 10Pour in chicken broth and lime juice, then simmer for 2 minutes.
- 11Stir in fresh cilantro and remove from heat.

- 13Spoon the shrimp filling into each tostones cup.
- 14Garnish with extra cilantro and a squeeze of lime.
- 15Serve warm and enjoy!
