Empanadillas de Pollo with Spicy Salsa

Ingredients

  • For the Empanadilla Dough:
  • 2 cups all-purpose flour 🌾
  • 0.5 tsp salt 🧂
  • 2 tbsp butter (cold, diced) 🧈
  • 0.5 cup warm water 💧
  • 1 egg (for egg wash, optional) 🥚
  • For the Chicken Filling:
  • 1 chicken breast, shredded 🍗
  • 0.5 onion, diced 🧅
  • 1 clove garlic, minced 🧄
  • 1 tsp olive oil
  • 1 tsp cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp oregano 🌿
  • 0.25 tsp salt & pepper
  • 0.25 cup tomato sauce 🍅
  • For the Spicy Salsa:
  • 1 tomato, chopped 🍅
  • 0.5 red bell pepper, diced 🌶️
  • 1 small jalapeño, chopped 🔥
  • 0.25 red onion, finely chopped 🧅
  • 1 tbsp lime juice 🍋
  • 1 tbsp cilantro, chopped 🌿
  • Salt & pepper to taste

Instructions

  1. 11️⃣ Prepare the Dough
  2. 2In a bowl, mix flour and salt. Add cold butter and mix with your hands until crumbly.
  3. 3Slowly add warm water, kneading until a soft dough forms. Cover and let rest 10 minutes.
  4. 42️⃣ Cook the Chicken Filling
  5. 5Heat olive oil in a pan. Sauté onions and garlic until soft.
  6. 6Add shredded chicken, cumin, paprika, oregano, salt, and tomato sauce. Stir well and cook for 5 minutes. Set aside.
  7. 73️⃣ Make the Spicy Salsa
  8. 8In a bowl, mix tomato, bell pepper, jalapeño, onion, lime juice, cilantro, salt, and pepper. Let sit for flavors to blend.
  9. 94️⃣ Assemble & Fry the Empanadillas
  10. 10Roll out dough and cut into 4-inch circles.
  11. 11Add 1 tbsp chicken filling in each circle, fold in half, and seal edges with a fork.
  12. 12Heat oil in a pan and fry empanadillas until golden brown, about 3 minutes per side.
  13. 13Remove and drain on a paper towel.
