Pulled Pork Tostadas with Avocado Crema

- For the Pulled Pork:
- 2 cups cooked pulled pork (leftover or store-bought)
- 0.5 teaspoon cumin
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- For the Avocado Crema:
- 1 ripe avocado 🥑
- 0.5 cup sour cream or Greek yogurt
- 1 tablespoon lime juice 🍋
- 1 garlic clove, minced
- 0.25 teaspoon salt
- 2 tablespoons fresh cilantro, chopped
- For the Tostadas:
- 8 corn tostadas 🌽
- 0.5 cup crumbled queso fresco
- 0.25 cup chopped red onion
- 0.25 cup fresh cilantro leaves
- 0.5 cup shredded lettuce
- 0.5 cup cherry tomatoes, diced 🍅
Instructions
- 11️⃣ Prepare the Pork: Heat olive oil in a pan over medium heat. Add pulled pork, cumin, smoked paprika, salt, and black pepper. Stir well and cook for 5 minutes until warm and slightly crispy.
- 22️⃣ Make the Avocado Crema: In a blender or bowl, mix avocado, sour cream (or Greek yogurt), lime juice, garlic, and salt. Blend until smooth and creamy. Stir in chopped cilantro.
- 33️⃣ Assemble the Tostadas: Spread a generous layer of avocado crema on each tostada. Top with pulled pork, crumbled queso fresco, chopped red onion, shredded lettuce, and diced cherry tomatoes.
- 44️⃣ Serve & Enjoy: Garnish with fresh cilantro and an extra squeeze of lime. Serve immediately for the best crunch!
