Ingredients
- 2 ripe plantains 🍌 (sliced lengthwise)
- 1 lb ground beef 🥩
- 1 small onion, diced 🧅
- 2 cloves garlic, minced 🧄
- 0.5 red bell pepper, diced 🌶️
- 1 tsp adobo seasoning 🧂
- 0.5 tsp ground cumin
- 0.5 tsp dried oregano
- 0.5 cup tomato sauce 🍅
- 0.25 cup green olives, sliced 🫒
- 1 tbsp olive oil
- 4 large flour tortillas 🌯
- 0.5 cup queso blanco, crumbled 🧀
- 1 tbsp butter 🧈
- Fresh cilantro for garnish 🌿
Instructions
- 1Cook the Plantains:
- 2Heat butter in a pan over medium heat. Fry plantain slices until golden brown on both sides (about 2-3 minutes per side). Set aside.
- 3Prepare the Beef Filling:
- 4In a skillet, heat olive oil and sauté the onions, garlic, and red bell pepper for 2 minutes.
- 5Add ground beef, breaking it apart while cooking. Sprinkle adobo, cumin, and oregano.
- 6Stir in tomato sauce and olives, cooking for 5-7 minutes until the meat is fully cooked.
- 7Assemble the Wraps:
- 8Warm tortillas slightly to make them pliable.
- 9Place a layer of cooked plantains on each tortilla.
- 10Spoon beef mixture on top and sprinkle with crumbled queso blanco.
- 11Roll tightly into a wrap and slice in half.
