Tostones with Pulled Pork and Mojo
Story

Ingredients
- For the Tostones
- 3 green plantains 🍌
- Oil for frying 🛢️
- Salt to taste 🧂
- For the Pulled Pork
- 2 cups cooked pulled pork 🐖
- 0.5 tsp cumin
- 0.5 tsp oregano
- Salt and pepper
- For the Mojo Sauce
- 0.25 cup olive oil 🫒
- 6 garlic cloves, minced 🧄
- 0.25 cup orange juice 🍊
- 2 tbsp lime juice 🍋
- 1 tbsp chopped cilantro 🌿
- Salt to taste
Instructions
- 1Tostones:
- 2Peel and cut plantains into 1-inch chunks.
- 3Fry in hot oil for 3–4 minutes until lightly golden. Remove and flatten each one with the bottom of a glass.
- 4Return to oil and fry until crispy and golden. Season with salt.
- 5Pulled Pork:
- 6Warm pulled pork in a skillet with cumin, oregano, salt, and pepper. Sauté for 5–6 minutes until slightly crisp on the edges.
- 7Mojo Sauce:
- 8Heat olive oil in a small pan. Add garlic and cook until golden and fragrant.
- 9Remove from heat and stir in orange juice, lime juice, cilantro, and salt.
- 10Assemble:
- 11Place tostones on a platter.
- 12Top each one with pulled pork.
- 13Drizzle mojo sauce generously and serve with lime wedges!
