Guava BBQ Ribs with Yucca Fries
Story
When Don Luis was a young father, he once traded a bag of fresh mangos π₯ for a small guava tree π³ from his neighbor Don Papo. That tree became the heart of many family barbecues π₯. Years later, with three generations around the table π¨βπ©βπ¦, Don Luis slow-cooked ribs with a glaze made from the ripest guavas picked right from that same tree. The tangy sweetness and smoky aroma became legendary on their street π‘. That day, little Nico (his grandson) dipped a crispy yucca fry into the leftover sauce and shouted, *βΒ‘Abuelito, this tastes like vacation!β* ποΈ Ever since, Guava BBQ Ribs with Yucca Fries have been the go-to recipe for turning any Sunday into a tropical celebration π.
Ingredients
- For the Ribs:
- 2 racks of pork baby back ribs (about 3 lbs) π
- 1 tbsp salt π§
- 1 tsp black pepper β«
- 1 tbsp smoked paprika πΆοΈ
- 1 tsp garlic powder π§
- 1 tsp onion powder π§
- For the Guava BBQ Sauce:
- 1 cup guava paste or guava jelly π―
- 0.5 cup ketchup π
- 2 tbsp apple cider vinegar π
- 1 tbsp soy sauce π₯’
- 2 tsp brown sugar π¬
- 1 tsp Dijon mustard πΏ
- 1 garlic clove, minced π§
- 1 tsp chili powder (optional for a kick!) πΆοΈ
- For the Yucca Fries:
- 2 large yucca (cassava) roots, peeled and cut into fries π
- Salt to taste π§
- 2 tbsp olive oil (or oil spray) π«
Instructions
- 1Prep the Ribs
- 2Remove the thin membrane from the back of the ribs πͺ.
- 3Rub generously with salt, pepper, paprika, garlic powder, and onion powder π. Let them rest for 30 min (or overnight in the fridge π§ for extra flavor!).
- 4Bake Low and Slow
- 5Preheat oven to 300Β°F (150Β°C) β¨οΈ. Wrap ribs in foil, place on a baking sheet, and bake for 2.5 hours until tender.
- 6Make the Guava BBQ Sauce
- 7In a saucepan over medium heat, combine guava paste, ketchup, vinegar, soy sauce, brown sugar, mustard, garlic, and chili powder π₯.
- 8Stir until smooth and simmer for 10 minutes until thick and glossy β¨.
- 9Finish the Ribs
- 10Remove ribs from oven, discard foil, and brush generously with the guava BBQ sauce ποΈ.
- 11Broil for 5β8 minutes or grill on high until caramelized and sticky π₯.
- 12Make the Yucca Fries
- 13Boil yucca sticks in salted water for 15β20 min until just tender π². Drain and let cool slightly.
- 14Toss with olive oil, spread on a baking sheet or air fryer basket, and bake/air fry at 425Β°F (220Β°C) until golden and crispy (about 15β20 min) π.
