Guayaba BBQ Ribs con Yucca Fries
Historia
When Don Luis was a young father, he once traded a bag de fresco mangos 🥭 para a pequeño guayaba tree 🌳 from his neighbor Don Papo. That tree became the heart de many family barbecues 🔥. Years later, con three generations around the table 👨👩👦, Don Luis slow-cooked ribs con a glaze made from the ripest guavas picked right from that same tree. The tangy sweetness y smoky aroma became legendary on their street 🏡. That day, little Nico (his grandson) dipped a crispy yucca fry into the leftover sauce y shouted, *“¡Abuelito, this tastes like vacation!”* 🏖️ Ever since, guayaba BBQ Ribs con Yucca Fries have been the go-to recipe para turning any Sunday into a tropical celebration 🌞.
Ingredientes
- para the Ribs:
- 2 racks de cerdo baby back ribs (about 3 lbs) 🐖
- 1 tbsp sal 🧂
- 1 tsp pimienta negra ⚫
- 1 tbsp paprika ahumada 🌶️
- 1 tsp ajo en polvo 🧄
- 1 tsp cebolla powder 🧅
- para the guayaba BBQ Sauce:
- 1 cup guayaba paste o guayaba jelly 🍯
- 0.5 cup ketchup 🍅
- 2 tbsp apple cider vinegar 🍎
- 1 tbsp soy sauce 🥢
- 2 tsp brown sugar 🍬
- 1 tsp Dijon mustard 🌿
- 1 ajo clove, minced 🧄
- 1 tsp chili powder (opcional para a kick!) 🌶️
- para the Yucca Fries:
- 2 grande yucca (cassava) roots, peeled y cut into fries 🍟
- sal to taste 🧂
- 2 tbsp aceite de oliva (o oil spray) 🫒
Instrucciones
- 1Prep the Ribs
- 2Remove the thin membrane from the back de the ribs 🔪.
- 3Rub generously con sal, pepper, paprika, ajo en polvo, y cebolla powder 👐. Let them rest para 30 min (o overnight in the fridge 🧊 para extra flavor!).
- 4Bake Low y Slow
- 5Preheat oven to 300°F (150°C) ♨️. Wrap ribs in foil, place on a baking sheet, y bake para 2.5 hours until tender.
- 6Make the guayaba BBQ Sauce
- 7In a saucepan over fuego medio, combine guayaba paste, ketchup, vinegar, soy sauce, brown sugar, mustard, ajo, y chili powder 🥄.
- 8Stir until smooth y simmer para 10 minutes until thick y glossy ✨.
- 9Finish the Ribs
- 10Remove ribs from oven, discard foil, y brush generously con the guayaba BBQ sauce 🖌️.
- 11Broil para 5–8 minutes o grill on high until caramelized y sticky 🔥.
- 12Make the Yucca Fries
- 13Boil yucca sticks in salted water para 15–20 min until just tender 🍲. Drain y let cool slightly.
- 14Toss con aceite de oliva, spread on a baking sheet o air fryer basket, y bake/air fry at 425°F (220°C) until golden y crispy (about 15–20 min) 🍟.
