Ingredientes

  • para the Spicy Pernil:
  • 2 lbs cerdo shoulder (pernil), cut into chunks
  • 4 ajo cloves, minced
  • 1 tbsp dried oregano
  • 1 tbsp paprika ahumada
  • 1 tsp red pepper flakes (adjust to taste!)
  • 1 tbsp ground cumin
  • Juice de 2 limes
  • 2 tbsp aceite de oliva
  • sal y pimienta negra to taste
  • para the Pickled cebollas:
  • 1 red cebolla, thinly sliced
  • 0.5 cup rice vinegar
  • 1 tbsp sugar
  • 1 tsp sal
  • 0.5 cup water
  • para the Wraps:
  • 1 head Bibb o mantequilla lettuce, separated & washed
  • 1 avocado, sliced
  • 0.5 cup shredded carrots
  • fresco cilantro leaves
  • lima wedges

Instrucciones

  1. 1Marinate the cerdo: In a grande bowl, combine ajo, oregano, cumin, paprika, pepper flakes, lima juice, aceite de oliva, sal, y pepper. Add cerdo y mix well. Cover y marinate para 2 hours (o overnight para deeper flavor).
  2. 2cocina the pernil: Preheat oven to 300°F (150°C). Place cerdo in a roasting pan, cover con foil, y roast para 2.5 to 3 hours until fork-tender. Let rest, then shred.
  3. 3Pickle the cebollas: In a saucepan, bring vinegar, sugar, sal, y water to a boil. Pour over sliced cebollas in a bowl. Let sit para 30 minutes.
  4. 4Assemble the wraps: On each lettuce leaf, add shredded cerdo, avocado slices, carrots, y pickled cebollas. termina con cilantro y lima juice.
