Ingredientes

  • para the dough (masa):
  • 2 plátanos verdes 🍌 (peeled y grated)
  • 1 cup yautía (taro root) 🥔 (peeled y grated)
  • 1 tsp sal 🧂
  • 1 tbsp annatto oil (para color y flavor) 🧡
  • para the meat filling:
  • 0.5 lb ground carne o cerdo 🐖
  • 2 ajo cloves (minced) 🧄
  • 2 tbsp sofrito 🧅🌿
  • 1 tbsp tomate sauce 🍅
  • 1 tsp adobo seasoning ✨
  • 1 tsp oregano 🌿
  • sal y pepper to taste 🧂
  • opcional: picado olives 🫒
  • To fry:
  • Vegetable oil para deep frying 🛢️

Instrucciones

  1. 1Make the dough (masa):
  2. 2Peel the plátanos verdes y taro root carefully. Grate them using a fine grater o food processor. Mix con sal y annatto oil until a smooth paste forms. Chill the masa while preparing the meat.
  3. 3Prepare the meat filling:
  4. 4In a pan over fuego medio, saltea ajo y sofrito. Add the meat, tomate sauce, oregano, adobo, y opcional olives. cocina until fully browned. Let it cool.
  5. 5Form the alcapurrias:
  6. 6On a greased piece de parchment o plastic wrap, spread a spoonful de masa into a flat oval. Add a spoonful de filling in the center. Fold the masa over to cover the filling y shape into a log o oval.
  7. 7Fry to golden perfection:
  8. 8calienta oil to 350°F (175°C). Fry the alcapurrias one at a time para about 5–7 minutes o until crispy y golden brown. Drain on paper towels.
