Ingredientes
- para the Alcapurrias
- 2 plátanos verdes 🍌
- 1 lb yautía (malanga o taro root), peeled y grated 🥔
- 1 tsp sal 🧂
- 1 tbsp annatto oil (achiote) o vegetable oil con paprika 🌶️🛢️
- 1 tsp ajo en polvo 🧄
- para the Filling
- 0.5 lb ground carne o cerdo 🐄🐖
- 0.25 cup tomate sauce 🍅
- 1 tbsp sofrito 🧅🌿
- 1 tsp sazón con annatto 🧂
- sal y pepper to taste
- para the cilantro Mojo Sauce
- 1 bunch fresco cilantro 🌿
- 2 ajo cloves 🧄
- 0.5 cup aceite de oliva 🫒
- 1 tbsp vinegar 🍋
- Pinch de sal 🧂
- opcional: 1 tsp lima juice 🍈
Instrucciones
- 1Prep the Masa (Dough)
- 2Peel y grate the yautía y plátanos using a fine grater. 🌀
- 3Mix them in a bowl con sal, ajo en polvo, y annatto oil until it forms a smooth paste. Chill in the fridge while you prep the filling. ❄️
- 4Make the Filling
- 5In a pan, saltea sofrito until fragrant. Add ground meat y cocina until browned.
- 6Stir in tomate sauce, sazón, y season con sal y pepper. cocina until mixture thickens slightly. reserva to cool. 🥄
- 7Form the Alcapurrias
- 8On a piece de parchment o guineo leaf, spread 2–3 tbsp de masa into an oval.
- 9Add a spoonful de filling in the center, then fold y seal into a torpedo shape using the paper o your hands. 🚀
- 10Fry
- 11calienta oil to 350°F (175°C). Carefully fry alcapurrias in batches para 5–6 minutes each side o until crispy y golden. Drain on paper towels. 🧻🔥
- 12Make the cilantro Mojo
- 13In a blender, combine cilantro, ajo, oil, vinegar, sal, y lima juice. Blend until smooth y drizzle over hot alcapurrias. 🌿💚
