Alcapurrias con Ajo Sauce

Ingredientes
- para the Masa:
- 2 green guineos 🍌 (peeled y grated)
- 1 lb yautía (malanga) 🥔 (peeled y grated)
- 1 tbsp achiote oil (o annatto-infused oil) 🟠
- 1 tsp sal 🧂
- para the Filling:
- 0.5 lb ground carne o cerdo 🥩
- 0.25 cup cebolla, picado en cubos 🧅
- 2 cloves ajo, minced 🧄
- 1 tbsp sofrito 🌿
- 1 tbsp tomate sauce 🍅
- sal y pepper to taste 🧂🌶️
- opcional: green olives 🫒 y picado cilantro 🌿
- para Frying:
- Neutral oil (vegetable o canola) 🛢️
- ajo Sauce (Ajillo):
- 0.25 cup aceite de oliva 🫒
- 5 cloves ajo, finely minced 🧄
- 0.5 tsp sal
- 1 tbsp limón juice 🍋 o vinegar
Instrucciones
- 1Prepare the Filling:
- 2In a pan, calienta a little oil y saltea the cebolla y ajo until fragrant. Add the meat, sofrito, y tomate sauce. Season con sal y pepper. cocina until browned y tender. reserva to cool.
- 3Make the Masa:
- 4In a bowl, mix grated green guineos y yautía. Add achiote oil y sal. Mix well until smooth y sticky.
- 5Shape the Alcapurrias:
- 6On a piece de parchment paper o guineo leaf, spread about 2–3 tablespoons de masa into a rectangle. Add 1 tbsp de filling in the center. Fold y seal carefully. Shape into a pequeño football-like log.
- 7Fry Until Golden:
- 8calienta oil in a deep pan to 350°F (175°C). Carefully slide in each alcapurria y fry until golden brown on all sides, about 6–8 minutes. Drain on paper towels.
- 9Prepare the ajo Sauce:
- 10In a saucepan, calienta aceite de oliva over low calienta. Add minced ajo y cocina gently until fragrant (not browned). Add limón juice y sal. Stir well.
- 11sirve Hot:
- 12Drizzle ajo sauce over each alcapurria o sirve on the side para dipping.
