Pollo en Fricase with Rice and Beans

Ingredients
- 2 lbs chicken thighs and drumsticks 🍗
- 2 tablespoons olive oil 🫒
- 1 medium onion, diced 🧅
- 1 green bell pepper, diced 🫑
- 4 garlic cloves, minced 🧄
- 1 can tomato sauce (8 oz) 🍅
- 2 cups chicken broth 🍲
- 2 medium potatoes, peeled and diced 🥔
- 0.5 cup sliced pimiento-stuffed olives 🫒
- 2 bay leaves 🌿
- 1 teaspoon oregano 🌱
- Salt and pepper, to taste 🧂
- Fresh cilantro, chopped (for garnish) 🌿
- White rice and beans, cooked separately 🍚🫘
Instructions
- 1Season chicken with salt and pepper. Heat olive oil in a large pot over medium-high heat. Brown the chicken on all sides until golden (about 5-7 minutes), then remove and set aside.
- 2In the same pot, sauté onions, bell peppers, and garlic until fragrant and soft, about 3 minutes.
- 3Stir in tomato sauce, chicken broth, olives, potatoes, bay leaves, and oregano. Bring to a boil.
- 4Return chicken to the pot. Lower heat to medium-low, cover, and simmer for 30-35 minutes until chicken and potatoes are tender.
- 5Serve hot over white rice and beans, garnished with fresh cilantro. Enjoy! 🍽️😋
