Cuban Mojo Chicken with Black Beans

Ingredients

  • For Mojo Chicken:
  • 4 chicken thighs, bone-in and skin-on 🍗
  • 0.5 cup fresh orange juice 🍊
  • 0.25 cup fresh lime juice 🍋
  • 4 cloves garlic, minced 🧄
  • 1 tsp ground cumin 🌿
  • 0.5 tsp dried oregano 🌱
  • 0.25 cup olive oil 🫒
  • Salt and pepper, to taste 🧂
  • For Black Beans:
  • 2 cans black beans, drained and rinsed 🫘
  • 1 small onion, diced 🧅
  • 1 green bell pepper, diced 🫑
  • 2 cloves garlic, minced 🧄
  • 1 tsp ground cumin 🌿
  • 1 tbsp olive oil 🫒
  • Salt and pepper, to taste 🧂
  • Fresh cilantro, chopped for garnish 🌿

Instructions

  1. 1Make the Mojo Marinade: Combine orange juice, lime juice, garlic, cumin, oregano, olive oil, salt, and pepper in a bowl. Whisk thoroughly. 🍋✨
  2. 2Marinate Chicken: Place chicken thighs in a bowl, pour marinade over them, cover, and refrigerate for at least 30 minutes or overnight. 🥣⏳
  3. 3Cook Chicken: Preheat oven to 400°F (200°C). Place chicken on a baking sheet, skin-side up. Roast for 35-40 minutes until golden and juices run clear. 🍗🔥
  4. 4Prepare Black Beans: In a saucepan, heat olive oil and sauté onion, bell pepper, and garlic until tender. Add black beans, cumin, salt, and pepper. Cook on medium heat, stirring occasionally, for 10 minutes. 🫘🥘
