Black Bean and Avocado Quesadillas

Ingredients

  • 4 medium flour tortillas 🌯
  • 1 cup canned black beans, drained & rinsed 🖤
  • 1 ripe avocado, sliced 🥑
  • 1 cup shredded cheese (cheddar, Monterey Jack, or blend) 🧀
  • 1 tsp olive oil or butter for skillet 🧈
  • Optional: ¼ tsp cumin, chili powder, or a pinch of salt for beans 🌶️🧂

Instructions

  1. 1Season the Beans (Optional): In a bowl, mix black beans with cumin, chili powder, or salt if desired.
  2. 2Assemble: On one tortilla, layer shredded cheese, black beans, avocado slices, and more cheese. Top with second tortilla.
  3. 3Heat the Skillet: Add olive oil or butter to a pan over medium heat.
  4. 4Cook & Flip: Place the quesadilla in the skillet and cook for about 3–4 minutes per side, or until golden brown and melty.
  5. 5Slice & Serve: Cut into wedges and serve with salsa, sour cream, or a squeeze of lime! 🍋
