Pineapple and Dulce de Leche Crepes

Ingredients
- 1 cup all-purpose flour 🌾

- 1 tsp brown sugar 🍯
- 0.5 cup dulce de leche (store-bought or homemade) 🤎
- Optional: whipped cream and powdered sugar for topping 🍦❄️
Instructions
- 1Make the crêpe batter: In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla, and salt until smooth. Let it rest for 5–10 minutes. 🥣✨
- 2Prepare the pineapple filling: In a small pan, melt butter over medium heat. Add the diced pineapple and brown sugar. Cook until golden and slightly caramelized (about 6–8 minutes). 🍍🔥
- 3Cook the crêpes: Heat a non-stick skillet over medium heat. Lightly butter it and pour ¼ cup of batter, swirling to coat the pan. Cook for 1–2 minutes until edges lift, then flip and cook the other side. Repeat until all crêpes are ready. 🥞🔁
- 4Assemble: Spread a spoonful of dulce de leche onto each crêpe, add a spoonful of the warm pineapple, and fold into quarters or roll them up. Top with extra drizzle of dulce de leche, whipped cream, and powdered sugar if desired. 🤤💫
