Pollo Guisado with Rice and Avocado

Ingredients
- 2 lbs bone-in chicken thighs or drumsticks 🍗
- 2 tbsp olive oil 🫒
- 0.5 cup sofrito 🧅🫑🌿
- 0.25 cup tomato sauce 🍅
- 0.5 tsp adobo seasoning 🧂
- 0.5 tsp sazón with annatto 🌶️
- 0.5 tsp oregano 🌿
- 1 bay leaf 🍃
- 1 medium potato, cubed 🥔
- 0.5 cup carrots, sliced 🥕
- 1 1/2 cups chicken broth 🍗🥣
- Salt and pepper to taste 🧂
- 2 cups cooked white rice 🍚
- 1 ripe avocado, sliced 🥑
Instructions
- 1Season the chicken with adobo, sazón, oregano, salt, and pepper. Let it sit for 10 minutes.
- 2In a large caldero or pot, heat olive oil over medium-high heat. Brown the chicken pieces on all sides. Remove and set aside. 🔥
- 3In the same pot, sauté sofrito for 2 minutes until fragrant. Add tomato sauce and stir. 🍅🧅
- 4Return the chicken to the pot, add potatoes, carrots, bay leaf, and chicken broth. Stir to combine. 🥔🥕
- 5Cover and simmer for 40–45 minutes, stirring occasionally, until chicken is tender and veggies are soft. 🍲
- 6Taste and adjust seasoning. Remove bay leaf before serving.
- 7Serve hot over fluffy white rice and top with fresh avocado slices. 🍚🥑
