Ingredients

  • 2 cups cooked pernil (shredded) 🐖
  • 1 small onion, finely chopped 🧅
  • 2 cloves garlic, minced 🧄
  • 2 tbsp sofrito 🌿
  • 1 tsp sazón with achiote 🧡
  • 0.5 tsp adobo seasoning
  • 2 tbsp tomato sauce 🍅
  • 10 empanada discs (store-bought or homemade) 🥟
  • 1 egg (for egg wash) 🥚
  • Oil for frying (or spray for air fryer) 🛢️

Instructions

  1. 1Warm the filling – In a skillet over medium heat, sauté onions and garlic until translucent. Add sofrito, sazón, adobo, and tomato sauce. Stir in the shredded pernil and cook for 3–5 minutes until well blended. Let it cool.
  2. 2Assemble – Place 1–2 tbsp of the pork filling in the center of each empanada disc. Fold in half, press edges with a fork to seal. 🥟
  3. 3Egg wash – Brush the top with beaten egg for a golden finish.
