Dominican Sancocho

Ingredients

  • Meats:
  • 1 lb beef stew meat
  • 1 lb pork shoulder, cubed
  • 1 lb chicken thighs (bone-in for flavor)
  • 1 smoked sausage or longaniza, sliced
  • Root Veggies:
  • 2 green plantains 🍌
  • 2 yucca (cassava) roots 🥥
  • 1 sweet potato 🍠
  • 2 potatoes 🥔
  • 1 piece of auyama (Caribbean pumpkin) 🎃
  • Aromatics & Seasoning:
  • 1 red onion, chopped
  • 4 garlic cloves, minced 🧄
  • 1 green bell pepper, chopped
  • 1 handful cilantro 🌿
  • 2 tbsp tomato paste
  • 1 chicken bouillon cube
  • Salt and pepper to taste 🧂
  • 1 lime (for cleaning meats) 🍋
  • Liquids:
  • 10 cups water 💧
  • Optional: 1 cup beef or chicken broth for extra flavor

Instructions

  1. 1Clean the meats with lime juice and rinse. Season with garlic, onion, cilantro, salt, and pepper. Let sit for 15 minutes.
  2. 2In a large pot, brown the meats in a bit of oil, one type at a time. Add tomato paste and a splash of water to deglaze.
  3. 3Add all the meats back into the pot, cover with water, and bring to a boil. Reduce to medium heat and simmer for 1 hour.
  4. 4Peel and chop all the root vegetables into thick chunks. Add them to the pot and simmer for another hour.
  5. 5Add the plantains, potatoes, pumpkin, and broth (if using). Simmer until everything is fork-tender and the stew thickens.
  6. 6Taste and adjust salt and pepper. Garnish with fresh cilantro and serve hot with white rice and avocado 🥑.
