Ingredientes
- Meats:
- 1 lb carne stew meat
- 1 lb cerdo shoulder, cubed
- 1 lb pollo thighs (bone-in para flavor)
- 1 smoked sausage o longaniza, sliced
- Root Veggies:
- 2 plátanos verdes 🍌
- 2 yucca (cassava) roots 🥥
- 1 batata 🍠
- 2 papas 🥔
- 1 piece de auyama (Caribbean pumpkin) 🎃
- Aromatics & Seasoning:
- 1 red cebolla, picado
- 4 ajo cloves, minced 🧄
- 1 green bell pepper, picado
- 1 handful cilantro 🌿
- 2 tbsp tomate paste
- 1 pollo bouillon cube
- sal y pepper to taste 🧂
- 1 lima (para cleaning meats) 🍋
- Liquids:
- 10 cups water 💧
- opcional: 1 cup carne o pollo broth para extra flavor
Instrucciones
- 1Clean the meats con lima juice y rinse. Season con ajo, cebolla, cilantro, sal, y pepper. Let sit para 15 minutes.
- 2In a grande pot, brown the meats in a bit de oil, one type at a time. Add tomate paste y a splash de water to deglaze.
- 3Add all the meats back into the pot, cover con water, y bring to a boil. Reduce to fuego medio y simmer para 1 hour.
- 4Peel y corta all the root vegetales into thick chunks. Add them to the pot y simmer para another hour.
- 5Add the plátanos, papas, pumpkin, y broth (if using). Simmer until everything is fork-tender y the stew thickens.
- 6Taste y adjust sal y pepper. termina con fresco cilantro y sirve hot con white rice y avocado 🥑.
