Sancocho (Dominican Stew)

Ingredients
- For the Protein:
- 1 lb beef stew meat (bone-in for extra flavor) 🥩
- 0.5 lb pork ribs or smoked pork bones 🐖
- 0.5 lb chicken (drumsticks or thighs) 🍗
- 2 teaspoons salt 🧂
- 1 teaspoon black pepper ⚫
- 1 teaspoon ground cumin ✨
- For the Base:
- 2 tablespoons olive oil 🫒
- 0.5 small onion, chopped 🧅
- 3 cloves garlic, minced 🧄
- 0.25 cup sofrito 🌿
- 2 Roma tomatoes, diced 🍅
- 1 teaspoon dried oregano 🌿
- 0.5 teaspoon smoked paprika 🌶️
- 0.5 teaspoon adobo seasoning ✨
- 1 bay leaf 🍃
- 8 cups chicken or beef broth 🍲
- For the Vegetables:
- 2 green plantains, peeled and cut into chunks 🍌
- 1 large yuca, peeled and chopped 🥔
- 2 ears of corn, cut into smaller sections 🌽
- 2 carrots, sliced 🥕
- 1 small potato, diced 🥔
- 0.25 cup chopped cilantro 🌿
Instructions
- 11️⃣ Sear the Meats
- 2Heat olive oil in a large pot over medium-high heat. Season beef, pork, and chicken with salt, pepper, and cumin, then sear until browned on all sides. Remove and set aside. 🥩🔥

- 4In the same pot, sauté onions, garlic, and sofrito for 2-3 minutes until fragrant. Stir in tomatoes, oregano, smoked paprika, adobo, and bay leaf. 🍅🌿

- 6Add broth and return the meats to the pot. Bring to a boil, then lower heat and simmer for 40 minutes, skimming off any foam. 🍲🔥
