Ingredients
- For the Carne Guisada:
- 1 ½ lbs beef chuck or stew meat, cut into chunks 🥩
- 2 tbsp olive oil 🫒
- 0.5 onion, chopped 🧅
- 0.5 red bell pepper, chopped 🌶️
- 3 cloves garlic, minced 🧄
- 1 tbsp tomato paste 🍅
- 1 tbsp sofrito (homemade or store-bought) 🌿
- 1 ½ cups beef broth 🍲
- 0.5 cup tomato sauce 🍅
- 1 tsp adobo seasoning
- 0.5 tsp cumin ✨
- 0.5 tsp dried oregano 🌿
- 0.5 tsp smoked paprika 🌶️
- 1 bay leaf 🍃
- 0.5 cup green olives (optional) 🫒
- 1 small potato, diced 🥔
- Salt & black pepper to taste 🧂
- For the Rice and Beans:
- 2 cups cooked white rice 🍚
- 1 can (15 oz) pink or red beans, drained and rinsed 🫘
- 1 tbsp olive oil 🫒
- 0.5 onion, finely chopped 🧅
- 1 clove garlic, minced 🧄
- 1 tbsp tomato sauce 🍅
- 0.5 tsp cumin
- 0.5 tsp adobo seasoning
- 0.5 cup chicken broth or water 🍲
- For Serving:
- Fresh cilantro, chopped 🌿
- Lime wedges 🍋
Instructions
- 11️⃣ Brown the Beef
- 2In a large pot, heat olive oil over medium-high heat. Season the beef with salt and black pepper, then sear the chunks until browned on all sides. Remove and set aside. 🥩🔥

- 4In the same pot, reduce heat to medium and add onions, bell peppers, and garlic. Sauté for 2-3 minutes until softened. Stir in tomato paste and sofrito, cooking for another 2 minutes to build flavor. 🌿✨

- 6Return the beef to the pot and add beef broth, tomato sauce, adobo, cumin, oregano, paprika, bay leaf, and olives. Stir well, cover, and let simmer on low heat for 1 hour, stirring occasionally. 🍲🔥

- 8After 1 hour, add diced potatoes and continue simmering for another 20-30 minutes, until the beef is fork-tender and the sauce thickens. Remove bay leaf. 🥔✨
