Puerto Rican Fried Rice with Chorizo

Ingredients

  • 3 cups day-old white rice 🍚 (cold for best texture)
  • 2 links of chorizo, diced 🔥🌭
  • 2 eggs, lightly beaten 🥚🥚
  • 0.25 cup red bell pepper, finely chopped ❤️🫑
  • 0.25 cup green onions, chopped 🌱
  • 2 tbsp sofrito (store-bought or homemade) 🧄🌿
  • 1 tbsp soy sauce or coconut aminos 🧂
  • 1 tbsp olive oil 🫒
  • Salt and pepper to taste 🧂🌶️
  • Optional: 1/4 cup sweet corn or peas 🌽🟢

Instructions

  1. 1Cook the chorizo: In a large skillet over medium heat, add a splash of olive oil and sauté the diced chorizo until crispy and browned. Remove and set aside. 🔥
  2. 2Scramble eggs: In the same pan, add the beaten eggs and quickly scramble. Remove and set aside with the chorizo. 🍳
  3. 3Sofrito magic: Add sofrito to the pan along with red bell pepper and green onions. Sauté for 2–3 minutes until fragrant. 🌿👃
  4. 4Add the rice: Toss in the cold white rice and mix well, breaking up clumps. Let it sit for a minute to crisp slightly at the bottom. 🍚🎶
  5. 5Combine & flavor: Add soy sauce, the cooked chorizo, scrambled eggs, and any optional veggies. Stir well to coat everything evenly. Season with salt and pepper. 🧂💃
  6. 6Serve hot with a wedge of lime or a little hot sauce if you dare! 🔥🍋
