Mofongo Sliders with Garlic Aioli

Instructions

  1. 1Peel & Slice the Plantains
  2. 2Cut plantains into 1.5-inch chunks and soak in salted water for 10 min.
  3. 3Fry the Plantains
  4. 4Heat oil over medium-high. Pat dry the chunks and fry until golden (about 4–5 min). Drain on paper towels.
  5. 5Mash the Mofongo
  6. 6In a large pilón or bowl, mash fried plantains with chicharrón, garlic, olive oil, and salt until chunky and moldable.
  7. 7Shape the Mofongo “Buns”
  8. 8Use a burger press or small ramekin to form flat discs—like mini buns. Set aside to cool slightly.
  9. 9Cook the Patties
  10. 10Season ground beef, form into 6 mini patties, and cook in a skillet (3–4 min per side). Add cheese if desired!
  11. 11Make Garlic Aioli
  12. 12Mix mayo, lemon juice, garlic, and a pinch of salt. Chill until ready to serve.
  13. 13Assemble the Sliders
  14. 14Stack mofongo bun ➡️ lettuce ➡️ tomato ➡️ patty ➡️ garlic aioli ➡️ top mofongo bun. Secure with a toothpick!
