Tostones with Avocado and Scrambled Egg

Ingredients

  • 2 green plantains 🍌
  • 2 eggs 🥚
  • 1 ripe avocado 🥑
  • 1 tbsp olive oil 🫒
  • 1 tsp butter 🧈
  • Salt & pepper to taste 🧂
  • Garlic powder (optional) 🧄
  • Lemon or lime wedge 🍋 (optional, for garnish)

Instructions

  1. 1Prep the plantains:
  2. 2Peel and slice the plantains into 1-inch chunks. Heat olive oil in a pan over medium heat.
  3. 3First fry:
  4. 4Fry the plantains on both sides until golden (about 3–4 min each side). Remove and flatten with the back of a cup or *tostonera*.
  5. 5Second fry:
  6. 6Return the flattened plantains to the oil and fry until crispy and golden brown. Sprinkle with salt and optional garlic powder. Set aside.
  7. 7Scramble the eggs:
  8. 8In a small pan, melt butter over low heat. Whisk eggs and pour them in. Stir gently until fluffy and just set.
  9. 9Avocado prep:
  10. 10Mash the avocado with a pinch of salt and a squeeze of lemon/lime juice.
  11. 11Assemble the dish:
  12. 12Spread mashed avocado on each tostone. Top with warm scrambled egg. Serve immediately.
