Tembleque (Coconut Pudding)

Ingredients
- 1 can (13.5 oz) coconut milk 🥥
- 0.5 cup cornstarch 🌽
- 0.5 cup sugar 🍚
- 0.13 tsp salt 🧂
- 0.25 tsp cinnamon (plus extra for garnish) 🌰
- Optional: 1/4 tsp vanilla extract 🌼
Instructions
- 1In a saucepan (off heat), whisk together cornstarch, sugar, salt, and cinnamon.
- 2Slowly add coconut milk, whisking to dissolve all lumps.
- 3Turn heat to medium and stir *constantly* until the mixture thickens — about 8–10 minutes.
- 4Once thick like pudding, remove from heat. Add vanilla if using.
- 5Pour into small cups or molds. Let it cool slightly before refrigerating.
- 6Chill for at least 4 hours or until set.
- 7Sprinkle with cinnamon, then unmold or serve directly in cups. Wiggle and giggle time! 😄
