Season 10 - Dinner / S10D16
Chilean Pastel de Choclo (Corn Pie)
Story
In the rustic hills of Chile, Don Luis once shared a warm meal with a family of farmers after a long day of storytelling under the vines 🌽🧺. The mother brought out a dish so comforting, the entire room went silent after the first bite. It was *Pastel de Choclo*—a layered, golden corn pie hiding a rich, savory filling beneath. Back in his kitchen, with Toby laying by his feet and the smell of caramelized onions in the air, Don Luis recreated the dish with a smile. “Some flavors,” he said, “tell stories better than words.” Now, he’s ready to pass it on to you! 💫 Time, Calories & Cost
Ingredients
- For the Corn Topping 🌽
- 5 cups corn kernels (fresh or frozen, thawed)
- 0.5 cup milk 🥛
- 2 tbsp butter 🧈
- 1 tbsp sugar (optional, for sweetness)
- For the Filling 🍗🥩
- 2 tbsp olive oil
- 1 onion, finely chopped 🧅
- 2 garlic cloves, minced 🧄
- 0.5 lb ground beef 🥩
- 0.5 lb shredded rotisserie chicken 🍗
- 0.25 cup black olives 🫒
- 2 hard-boiled eggs, sliced 🥚
- 0.25 cup raisins (yes, trust us! 😉)
- Salt & pepper to taste 🧂
Instructions
- 1Preheat the oven to 375°F (190°C).
- 2Make the corn topping: In a blender, combine corn, milk, butter, and sugar. Blend until creamy but slightly chunky. Cook in a saucepan over medium heat for 10–15 minutes until thickened. Stir often so it doesn’t stick! 🌽✨
- 3Prepare the filling: In a skillet, heat olive oil. Sauté onion until soft, then add garlic, ground beef, salt, and pepper. Cook until browned. Mix in shredded chicken. Remove from heat.
- 4Layer it up: In a baking dish, spread the meat mixture evenly. Top with olives, egg slices, and raisins. Pour the corn topping over everything and smooth it out.
- 5Bake uncovered for 30–40 minutes or until golden and slightly crispy on top. Let cool for 10 minutes before serving.
