Mexican Tacos al Pastor

Instructions
- 1Soak and blend the marinade: Remove stems and seeds from the guajillo chiles. Soak them in hot water for 15 min. Then blend with garlic, pineapple juice, vinegar, cumin, oregano, cloves, chipotle, salt, pepper, and achiote paste until smooth.
- 2Marinate the pork: Coat sliced pork in the marinade. Cover and refrigerate for at least 4 hours, ideally overnight.
- 3Cook the pork: Heat a pan or grill. Cook pork slices until they’re nicely browned and caramelized, about 3–4 min per side.
- 4Warm the tortillas: Heat tortillas in a dry pan or directly over a flame for a toasty edge.
- 5Assemble the tacos: Add pork to each tortilla, top with pineapple, onion, cilantro, and a squeeze of lime. Enjoy! 🌮
