Coconut Curry Mofongo with Shrimp

Ingredients
- For the Mofongo 🍌
- 4 green plantains 🍌
- 3 garlic cloves, minced 🧄
- 0.25 cup pork rinds or crispy bacon 🥓
- 2 tbsp olive oil 🫒
- Salt to taste 🧂
- For the Coconut Curry Shrimp 🍤
- 1 lb shrimp, peeled and deveined 🦐
- 1 tbsp curry powder 🌶️
- 0.5 tsp paprika
- 1 can (13.5 oz) coconut milk 🥥
- 0.5 small onion, diced 🧅
- 1 clove garlic, minced 🧄
- 1 tbsp sofrito (optional but tasty!)
- 1 tbsp olive oil 🫒
- Cilantro for garnish 🌿
- Salt and pepper to taste
Instructions
- 1Make the Mofongo
- 2Peel and cut plantains into chunks. Boil or fry until tender (about 15 minutes).
- 3In a pilón (mortar), mash the garlic with salt. Add plantains and pork rinds or bacon. Mash until combined but chunky. Add olive oil as you go to keep it moist.
- 4Shape into balls or press into a bowl for a dome shape. Set aside.
- 5Prepare the Coconut Curry Shrimp
- 6In a skillet, heat olive oil and sauté onion and garlic until fragrant.
- 7Add sofrito (if using), curry powder, and paprika. Stir to toast the spices.
- 8Pour in the coconut milk, season with salt and pepper, and let it simmer for 5 minutes.
- 9Add shrimp and cook until pink and curled (about 4–5 minutes).
- 10Garnish with chopped cilantro.
- 11Assemble
- 12Place the mofongo on a plate and pour the curry shrimp over the top or around it. Serve warm with a smile 😊.
