Season 11 - Dinner / S11D23
Guava-Glazed Churrasco with Garlic Mofongo
Story
When Don Luis was a young man, he saved up for a special dinner at a tiny restaurant tucked away in the mountains of Puerto Rico. He still remembers the sizzling sound of the churrasco hitting the grill and the chef brushing a guava glaze over the steak like it was a secret ritual. That first bite? A flavor explosion! 💥 Sweet, smoky, garlicky, and a little tangy. Years later, Don Luis recreated that magic in his rustic kitchen for his grandson, using guava paste and a touch of vinegar to balance the sweetness. He paired it with garlic mofongo — mashed green plantains with crispy pork and olive oil, just like abuela used to make. 👴🏼🥄 “This,” he said, handing over the fork, “is how you remember who you are with every bite.” Time & Nutrition
