Ingredientes
- para the guayaba-Glazed Churrasco:
- 2 lbs skirt steak (churrasco)
- sal y pepper to taste
- 1 tsp oregano
- 3 ajo cloves, minced
- 2 tbsp aceite de oliva
- 0.5 cup guayaba paste (cut into chunks)
- 2 tbsp red wine vinegar
- opcional: pinch de chili flakes para a spicy twist
- para the ajo Mofongo:
- 4 plátanos verdes, peeled y sliced
- 4 ajo cloves, minced
- 2 tbsp mantequilla
- 3 tbsp aceite de oliva
- 0.5 cup chicharrón (cerdo cracklings), crushed
- sal to taste
- 1 tbsp lima juice (opcional, para brightness)
Instrucciones
- 1Prep the Churrasco:
- 2Season the skirt steak con sal, pepper, oregano, ajo, y aceite de oliva. Let it marinate while you make the mofongo. 🧄🌿
- 3Make the guayaba Glaze:
- 4In a saucepan, melt guayaba paste con red wine vinegar over low calienta. Stir until smooth y slightly thickened. reserva. 🍈🔥
- 5Fry the plátanos:
- 6calienta oil in a sartén y fry plátano slices until golden brown. Drain y transfer to a pilón (o grande bowl). 🍌💥
- 7Mash the Mofongo:
- 8Mash the fried plátanos con mantequilla, ajo, crushed chicharrón, y sal. Mix until chunky but combined. Add lima juice if using. 🥣💪
- 9cocina the Churrasco:
- 10Grill o pan-sear the steak over high calienta para 3–4 minutes per side, depending on thickness. Brush con guayaba glaze in the last minute de cooking. 🔥🍖
- 11sirve It Up:
- 12Slice the churrasco y sirve over a dome de mofongo. Drizzle extra glaze on top para that final wow! ✨
