Guava Cheese Empanadas with Coffee

Story

The morning sun peeked through the wooden blinds of Don Luis’s rustic kitchen, casting golden rays across the tiled counter. Birds chirped as the smell of strong Puerto Rican coffee filled the air. Today, he was preparing a treat close to his heart—Guava Cheese Empanadas. These,” he smiled, tying his jean and leather apron tight, “are the flavors of mi infancia.” He remembered his abuela wrapping the gooey guava paste in delicate dough, folding it like a treasure chest. As he brewed the café in his old-school greca, he hummed a bolero and laid out the dough. Every fold, every seal, was a love letter to tradition—and he knew these empanadas would bring joy to the youngest generation too. Time, Calories & Cost

Instructions

  1. 1Preheat oven to 375°F (190°C). Line a baking tray with parchment paper.
  2. 2Place empanada discs on a clean surface. Add 1 piece of guava paste and 1 cube of cream cheese to the center of each.
  3. 3Fold the disc in half and press the edges down with a fork to seal. 🌀
  4. 4Whisk the egg and brush the top of each empanada for a golden finish.
  5. 5Sprinkle a bit of sugar on top for extra sparkle (optional).
  6. 6Bake for 18–20 minutes, or until golden brown. Let cool for 5 minutes before serving.
  7. 7Brew a fresh cup of strong coffee ☕ (Don Luis uses Café Bustelo or Yaucono in his stovetop greca).
  8. 8Serve warm, alongside that bold cup of café. Perfect for dipping! 😋
