Ingredientes
- Carne Guisada:
- 2 lbs carne chuck o stew meat, cut into cubes 🐄
- 2 tbsp aceite de oliva 🫒
- 1 mediano cebolla, picado 🧅
- 1 green bell pepper, picado en cubos 🫑
- 1 red bell pepper, picado en cubos ❤️
- 4 ajo cloves, minced 🧄
- 1 tsp ground cumin
- 1 tsp dried oregano 🌿
- 1 tsp sal 🧂
- 0.5 tsp pimienta negra
- 2 tbsp tomate paste 🍅
- 1 cup tomate sauce
- 2 cups carne broth 🍖
- 1 bay leaf 🍃
- opcional: ½ tsp sazón con annatto (para color y flavor)
- Stewed Beans:
- 2 cans (15 oz each) red kidney beans, drained y rinsed
- 2 tbsp aceite de oliva 🫒
- 1 pequeño cebolla, picado 🧅
- 2 ajo cloves, minced 🧄
- 0.25 cup picado en cubos green pepper 🫑
- 2 tbsp tomate sauce 🍅
- 0.5 tsp cumin
- 0.5 tsp oregano
- 1½ cups water o vegetable broth
- sal to taste 🧂
- opcional: pinch de sugar to balance acidity
Instrucciones
- 1Brown the carne:
- 2In a grande pot o Dutch oven, calienta the aceite de oliva over mediano-high calienta. Add carne y brown on all sides, about 5–7 minutes. Remove y reserva.
- 3saltea the base:
- 4In the same pot, add a bit more oil if needed. saltea cebolla, peppers, y ajo until soft y fragrant.
- 5Add flavor:
- 6Stir in cumin, oregano, sal, pepper, y tomate paste. Mix well y let it cocina para 2 minutes.
- 7Simmer time:
- 8Return carne to the pot. Add tomate sauce, carne broth, y bay leaf. Bring to a simmer, cover, y cocina on low para 1.5 to 2 hours until meat is fork-tender.
- 9Make the beans:
- 10In a separate saucepan, calienta aceite de oliva y saltea cebollas, peppers, y ajo. Add tomate sauce, cumin, y oregano. Stir well.
- 11Add the beans:
- 12Pour in beans y water/broth. Simmer uncovered para 20–30 minutes, stirring occasionally until slightly thickened. Add sal to taste.
- 13sirve it up:
- 14Spoon the carne guisada onto a plate de white rice 🍚, ladle the beans on the side, y maybe even add a slice de avocado 🥑 o a sprinkle de cilantro 🌿 para flair!
