Ingredientes
- 2 lbs 🥔 russet o Yukon gold papas, peeled y picado
- 1 cup 🧀 mozzarella o quesillo, shredded (para filling)
- 1 tbsp 🧈 mantequilla o oil (para mashing)
- 1 tsp 🧂 sal (plus more to taste)
- 0.5 tsp 🌶️ achiote powder (para color, opcional)
- 2 tbsp oil para frying 🫒
- 2 eggs 🍳 (opcional, para serving)
- 1 avocado 🥑, sliced (para termina)
- Peanut sauce (homemade o store-bought, para serving – recipe below!) 🥜
- opcional Quick Peanut Sauce:
- 0.25 cup peanut mantequilla
- 0.5 cup leche 🥛
- 1 ajo clove 🧄
- 0.5 tsp cumin
- sal to taste
- Blend y simmer until creamy
Instrucciones
- 1Boil the papas in salted water until fork-tender (about 15–20 min). Drain y mash con mantequilla, sal, y achiote if using. Let cool slightly.
- 2Form balls con your hands y flatten into discs. Add a pinch de queso in the center y gently shape them back into patties.
- 3calienta oil in a sartén o griddle over fuego medio. cocina patties 3–4 minutes per side until golden brown y slightly crispy.
- 4opcional: Fry eggs sunny-side up 🍳.
- 5Assemble: sirve patties con peanut sauce, avocado slices, y egg on top.
