Ingredients
- For the Shrimp Filling:
- 1 lb shrimp, peeled, deveined, and chopped 🦐
- 1 tablespoon olive oil 🫒
- 0.5 teaspoon salt 🧂
- 0.25 teaspoon black pepper ⚫
- 0.5 teaspoon smoked paprika 🌶️
- 0.5 teaspoon cumin ✨
- 1 small onion, diced 🧅
- 0.5 cup bell peppers, diced 🌶️
- 2 cloves garlic, minced 🧄
- 0.25 cup fresh cilantro, chopped 🌿
- Juice of 1 lime 🍋
- For the Salsa Verde:
- 6 tomatillos, husked and rinsed 🍏
- 1 jalapeño, seeded (optional for less heat) 🌶️
- 0.25 cup white onion, chopped 🧅
- 2 cloves garlic 🧄
- 0.5 cup fresh cilantro 🌿
- Juice of 1 lime 🍋

- 0.5 teaspoon cumin ✨
- 0.5 cup chicken or vegetable broth 🍲
- For the Enchiladas:
- 8 small corn tortillas 🌮
- 1 cup shredded Monterey Jack or Oaxaca cheese 🧀
- 0.5 cup crumbled queso fresco (for topping) 🧀
- 0.5 cup sour cream or Mexican crema 🥄
- Extra cilantro for garnish 🌿
Instructions
