Ingredients

  • For the Fried Rice:
  • 2 cups cooked white rice (preferably day-old)
  • 2 tbsp vegetable oil
  • 0.5 red bell pepper, diced
  • 0.5 green bell pepper, diced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 green onions, sliced (for garnish)
  • 3 eggs, lightly beaten
  • 1 cup cooked shredded chicken or shrimp
  • 0.5 cup cooked sausage or Chinese-style roast pork (char siu)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 0.5 tsp ground ginger
  • 0.5 tsp black pepper
  • 1 tsp aji amarillo paste (for authentic Peruvian flavor)
  • For Garnish:
  • Lime wedges
  • Fresh cilantro (optional)

Instructions

  1. 11️⃣ Prepare the Rice – If using fresh rice, let it cool for at least 30 minutes. Day-old rice works best for stir-frying! 🍚❄️
  2. 22️⃣ Sauté the Aromatics – Heat vegetable oil in a large pan or wok over medium-high heat. Add onion, garlic, and bell peppers, and stir-fry for 2-3 minutes until fragrant. 🧄🧅🔥
  3. 33️⃣ Scramble the Eggs – Push the veggies to one side of the pan. Pour in the beaten eggs and let them cook slightly before scrambling. 🥚✨
  4. 44️⃣ Add the Protein – Stir in the shredded chicken, shrimp, or roast pork, mixing well to combine all flavors. 🍗🦐🔥
  5. 55️⃣ Stir-Fry the Rice – Add the rice to the pan, breaking up any clumps with a spatula. Pour in soy sauce, oyster sauce, sesame oil, ground ginger, black pepper, and aji amarillo paste. Toss everything together and cook for 3-5 minutes until well mixed and slightly crispy. 🥢🔥
