Story
Don Luis chuckled as he tossed rice high into the air from his well-worn wok. “You know,” he told his grandson, “this isn’t just fried rice—it’s *Chofán*!” A fusion dish born from Dominican kitchens and Chinese flavors, Chofán became a neighborhood favorite because it brought people together. “Leftover rice never had it so good,” he winked, slipping in tender chicken, eggs, and a splash of soy sauce.
Ingredients
- 4 cups cooked white rice 🍚 (best if chilled overnight)
- 2 tbsp vegetable oil 🛢️
- 2 eggs, beaten 🥚🥚
- 1 cup cooked chicken, chopped 🍗
- 0.5 cup ham, diced (optional) 🟪
- 0.5 cup bell peppers, chopped (red/green) 🫑
- 0.5 cup onions, diced 🧅
- 2 garlic cloves, minced 🧄
- 0.5 cup cabbage, shredded (optional for crunch) 🥬
- 0.25 cup soy sauce (or to taste) 🍜
- 1 tsp sesame oil (optional but flavorful) 🌿
- Salt and pepper to taste 🧂
- Green onions, sliced (for garnish) 🌱
Instructions
- 1Scramble the eggs: Heat 1 tbsp of oil in a wok or large skillet over medium-high heat. Pour in the eggs and scramble until just cooked. Remove and set aside. 🍳
- 2Sauté the veggies: Add the remaining oil, toss in garlic, onions, bell peppers, and cabbage. Sauté for 2–3 minutes.
- 3Add proteins: Mix in the chicken and ham. Stir-fry until heated through. 🔥
- 4Add rice: Stir in the rice, breaking up any clumps. Let it fry for a few minutes so it gets slightly crispy. 🔄
- 5Flavor time: Return the eggs to the pan, pour in soy sauce and sesame oil. Toss everything together until evenly coated. 👌
- 6Taste and serve: Adjust seasoning with salt and pepper. Garnish with green onions. Serve hot! 🍽️
