Don Luis chuckled as he tossed rice high into the air from his well-worn wok. “You know,” he told his grandson, “this isn’t just fried rice—it’s *Chofán*!” A fusion dish born from dominicano kitchens y Chinese flavors, Chofán became a neighborhood favorite because it brought people together. “Leftover rice never had it so good,” he winked, slipping in tender pollo, eggs, y a splash de soy sauce.
Ingredientes
- 4 cups cooked white rice 🍚 (best if chilled overnight)
- 2 tbsp vegetable oil 🛢️
- 2 eggs, beaten 🥚🥚
- 1 cup cooked pollo, picado 🍗
- 0.5 cup ham, picado en cubos (opcional) 🟪
- 0.5 cup bell peppers, picado (red/green) 🫑
- 0.5 cup cebollas, picado en cubos 🧅
- 2 ajo cloves, minced 🧄
- 0.5 cup cabbage, shredded (opcional para crunch) 🥬
- 0.25 cup soy sauce (o to taste) 🍜
- 1 tsp sesame oil (opcional but flavorful) 🌿
- sal y pepper to taste 🧂
- Green cebollas, sliced (para termina) 🌱
Instrucciones
- 1Scramble the eggs: calienta 1 tbsp de oil in a wok o grande sartén over mediano-high calienta. Pour in the eggs y scramble until just cooked. Remove y reserva. 🍳
- 2saltea the veggies: Add the remaining oil, toss in ajo, cebollas, bell peppers, y cabbage. saltea para 2–3 minutes.
- 3Add proteins: Mix in the pollo y ham. Stir-fry until heated through. 🔥
- 4Add rice: Stir in the rice, breaking up any clumps. Let it fry para a few minutes so it gets slightly crispy. 🔄
- 5Flavor time: Return the eggs to the pan, pour in soy sauce y sesame oil. Toss everything together until evenly coated. 👌
- 6Taste y sirve: Adjust seasoning con sal y pepper. termina con green cebollas. sirve hot! 🍽️
